How to make Burger Patties


Simple and easy recipe for Burger Patties. Made with minced meat, onion, garlic, pepper, salt, soya sauce, cornflour and butter.

Ingredients for Burger Patties:
  • 150g. minced meat (chicken, beef, lamb or rabbit)
  • 1 onion
  • 2 pips garlic
  • 1/8 tsp pepper
  • 1/4 tsp salt or to taste
  • 1 tsp soya sauce or to taste
  • 1 tsp cornflour
  • 3 tbsp oil, or 1 tbsp margarine or butter
How to make Burger Patties:
  1. Chop finely onion and garlic.
  2. Mix all the ingredients together evenly to get a firm mixture.
  3. Divide mixture into 4-6 portions.
  4. Shape each portion into flat rounds of about 1 1/2cm / 1/2" thick.
  5. Heat oil or margarine.
  6. Fry or grill burger on both sides till golden brown.
  7. Sandwich burger in between buns or toasted bread.
  8. Serve with sauce of choice, salad and pickles.

How to make Butter Rice

Butter Rice, or Arroz Menteiga

Serve this butter rice with curry, chicken roast or meat stew. Recipe for 6 people.


Ingredients for Butter Rice:
  1. 2 cups rice - washed and drained
  2. 3 cups water or chicken stock
  3. 4 dessertspoons butter
  4. 1 dessertspoons chopped onions
  5. A small piece of cinnamon and 2 cloves or 1/4 teaspoon of powdered cinnamon
  6. 1/4 to 1 cup raisins
Method:
  • Put butter in pan and fry chopped onions till golden brown.
  • Add rice and fry for about 2 minutes.
  • Add water or stock, cover and cook on steady fire till water is absorbed.
  • Lower flame and allow rice to cook slowly in its own steam. When rice is cooked, add salt, raisins, cinnamon and cloves. Add more butter if desired.
  • Leave pan of rice on slow flame for about 10 minutes before serving.
  • To serve, place butter rice on platter and decorate top with fried onions, blanched almonds - fried brown in butter.

How to make Macaroni and Cheese

Recipe for Macaroni and Cheese. Made with cheddar cheese, butter, milk, parmesan cheese, cayenne pepper and macaroni.


Ingredients for Macaroni and Cheese:
  • ½ cups butter
  • ½ cups flour
  • 4 cups milk
  • 1 cup cheddar cheese
  • 1 cup Parmesan or Monterey Jack cheese
  • ½ tsp cayenne pepper, or to taste
  • cooked macaroni
Method:
  1. Make a roux using half cup of butter (a stick) and half a cup of flour.
  2. Add 4 cups of heated milk and stir until smooth to complete the white sauce.
  3. Add cheese and cayenne pepper.
  4. Finally, mix with a pot of cooked pasta.
Alternate Recipe:
  • 8 oz (by weight) elbow macaroni
  • ½ cups milk
  • ¼ cups butter
  • ½ cups cheese (of the chef's preference)
  • 1 egg
  • dash of dried parsley and oregano
  • salt to taste
Method:
  1. Fill a pot with water, and add Macaroni and salt. Bring to boil stirring occasionally. While waiting to boil, in pot heat milk, and grate cheese into milk. This should create a basic cheese sauce. If too thin, add more grated cheese, if too thick, add more milk.
  2. When Macaroni becomes soft (chef's discretion) drain. Melt butter in pot and replace macaroni (without water). Stir until macaroni is completely covered. Add 1 egg, unscrambled. Stir until completely incorporated. Add cheese sauce, and herbs. Stir well, and serve hot.
