Cinnamon Ice Cream



A delicious treat, rich and creamy Cinnamon Ice Cream. Great spice mouth feel.




Cinnamon Ice Cream Recipe
  • 3 cups heavy cream
  • 1 1/2 cups whole milk
  • 2 vanilla beans, split lengthwise
  • 1 cup plus 2 tablespoons sugar
  • 6 egg yolks
  • 2 1/2 teaspoon ground cinnamon

Method:
  1. In a saucepan, combine heavy cream and milk.
  2. Scrape in seeds from vanilla beans; add beans. Bring just to simmer.
  3. Whisk sugar and yolks in large bowl to blend. Gradually whisk in hot cream mixture.
  4. Return mixture to same saucepan. Stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 6 min. (do not boil).
  5. Strain into large bowl. Whisk in ground cinnamon. Chill until cold, about 3 hours.
  6. Transfer custard to ice cream maker and process according to manufacturer's instructions.
  7. Transfer ice cream to a covered container and freeze until firm. (Can be made 3 days ahead. Keep frozen).
No ice-cream machine? Pour the cooked custard into a bowl, then put the bowl in the freezer for about one and a half hrs until it starts to freeze around the edges. Stir well, repeat process twice more until the mix is smooth. Freeze until needed in a suitable container.

Sweet Vinegar with Ginger, Knuckles and Eggs

In Cantonese culture, there are specific foods that we distribute to relatives, friends and almost anybody to celebrate the birth of a new family member. They are namely:


  • Chicken Wine Soup (when the baby is 12-day old)

  • Sweet Vinegar with Ginger, Knuckles and Eggs (any time after the baby’s birth)

  • Red Eggs (when the baby is one-month old)

Recently my niece gave birth to a baby boy and I was promoted to a grand-mom level. All of our family members were invited to her house to taste the sweet vinegar and the chicken wine soup to celebrate her baby’s 12-day.


While the baby’s parents are usually busy taking care of the baby, it is usually the grand parents taking care of the cooking of sweet vinegar. They started cooking the vinegar a month ahead of the baby’s birth. They kept cooking and cooking day after day to achieve the dark color. The longer the vinegar is cooked, the better it will be.


Sweet Vinegar with Ginger, Knuckles and EggsDon’t be scared by its dark color. It is very delicious. It is so delicious that some people like to eat it even though they don’t have a new born baby at home. And they don’t have friends or relatively with new born babies at home to give them this delicious food. Some restaurants therefore serve this as a dim sum. So next time when you are in Hong Kong, if you are lucky enough to go to a dim sum restaurant serving sweet vinegar with knuckle, ginger and eggs, make sure to order it.

We were even given some to take home. Note: vinegar cannot go with plastic utensils. So the host gave us glass jars.

Why is this combination: sweet vinegar, knuckle (pig’s rear leg), ginger and eggs? It is a matter of Chinese wisdom. This combination is mainly for the benefit of the new mother. Sweet vinegar and ginger has medical functions of warding off body cold and rheumatism, it also improves digestive system. It generally strengthens the new mother’s metabolism. Knuckles will compensate her lost of collagen during pregnancy. Eggs are of course to give her extra protein.

How to Say Cha Shao Bao in Cantonese?

Cha Shao Bao, an extremely popular Cantonese dim sum in Hong Kong. How to say it in Cantonese? Want to shock the waiters at the restaurant? Let's learn to say it. To continue my restaurant Cantonese lessons, you are going to learn two terms today – cha shao bao and la jiu cheung!! To make it more sensible – Steam Roast Pork Bun and Chili Sauce.

The other time one of my blog readers said he could not say chili sauce in Cantonese. Today I’m at a Chiu Chau restaurant and their chili sauce is quite unique – not extremely hot however very aromatic. It's excellent to go with my turnip pudding, and many other dim sums. So next time when you want to order a dish of chili sauce, say this:

KFC Macaroni and Cheese




Macaroni and cheese is generally cooked macaroni with white sauce that has a cheese flavor. A favorite among kids. Macaroni and cheese Recipe.


KFC Macaroni and Cheese Ingredients:
  • 2 cups elbow macaroni
  • 3/4 cup Velveeta cheese
  • 2/3 cup mild yellow Cheddar cheese
  • 1/3 cup whole milk
  • 1/4 teaspoon salt

Method:
  1. Cook macaroni following package directions..
  2. When the macaroni are cooked drain but do not rinse.
  3. To make the cheese sauce - In a saucepan over low heat combine the Velveeta cheese, shredded cheddar and the milk.
  4. Cook the cheeses till they are melted and then add the salt. Add macaroni and stir.
  5. Place in a casserole dish and bake for 10 to 15 minutes. You may want to broil the top to make a brown top.

Note: You could try substituting some or all of the cheddar cheese with gouda, mozzarella, or swiss cheese.

Easy Mashed Potatoes (Kfc Style)




Easy mashed potatoes, made with milk, butter, and seasonings. The Kentucky Fried Chicken mashed potatoes are served and made by mix. It comes in a bag just add water and butter. Many people just come to KFC to get these potatoes and gravy.


KFC Mashed Potatoes Recipe (Serves 6):
  • 2 1/2 cups Potato Flakes
  • 1 stick Margarine
  • 2 tablespoons Butter
  • 2 1/2 cups Hot Water
  • 3/4 cup Milk
  • 1 teaspoon salt & pepper

Method:
  1. Heat water, add butter and margarine till melted.
  2. Add the salt and cook for 2 minutes.
  3. Add the flakes and mix till it looks like regular potatoes.
  4. Add milk to proper consistency, beat on high speed until fluffy, scraping sides and bottom. 
  5. Serve with gravy.

How to make Potato Wedges (Kfc style)

KFC is still going strong with many menu items added since its beginning. One of Kentucky Fried Chicken's popular menu item is KFC Potato Wedges. Make this Potato Wedges and enjoy it finger licking good!


KFC Potato Wedges:
  • 5 medium to large potatoes cut into wedges
  • 1 cup Milk
  • 1 egg
  • 1 cup flour
  • 2 tablespoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon MSG
  • 1/4 teaspoon Paprika
  • dash of garlic powder
  • Oil for Frying

Method:

Heat oil to 375°F.
Cut the potatoes into 16 to 18 equal side wedges.
Mix the egg and milk till well blended in a big bowl.
Mix the dry ingredients into a large bowl.
Put some potatoes in the milk and egg then into the flour mixture till well coated.
Fry in fryer for 3 minutes remove from the oil and allow them to sit for one minute and then cook them again for 5 minutes or until cooked. It may take up to 6 minutes.
